I didn't plan on sharing this but thanks to my lovely Instagram friends and the messages I received, I will.
Today I present the 2-ingredient banana pancake! Gluten free but not taste free! Hoorah!
Here is what you'll need:
One nice ripe medium sized banana
One potato masher
Oh, and a bowl to mix it all in
Some sort of cooking apparatus (i.e. griddle, a nonstick pan, etc)
Turn on your griddle or heat up your pan.
Take your lovely banana and mash it to smitherines with your masher (a fork works well too). Try to get it as smooshed as possible.
Add in your cracked two eggs (remove all stray shells...)
Mix well. You can add some mixins here too if you'd like. Some we thought of were chocolate chips, strawberries, blueberries. Whatever your favorites are. Pinterest has tons of ideas and variations of these same very pancakes! #ilovepinterest
Wipe your stick of butter over your heated surface carefully.

Spoon some of the batter on to the griddle. I have small kids so I did about half a ladle full per pancake.
Let cook until the edges are all nice and bubbly then flip. Continue cooking until they look done. So helpful... I know.
Serve and/or give your breakfast it's own photoshoot. Whatevs.
I feel like they are sort of like a banana crepes. Super yummy and really easy to make.
